Breakfast: Coffee and two frittata muffins. I got the idea to make these from watching The Biggest Loser. Mine have turkey bacon, sauteed onion and bell pepper, some cheese and the eggs and milk. I’ll try out some other flavor combinations next week.
Lunch: Leftover turkey chili taco soup
Dinner: A few slices of bread, some cheese, and some olives. Sometimes you just want snacks for dinner, on a paper plate so there aren’t dishes to wash.
When I woke up this morning I was really craving something savory. I had coffee and 2 hard boiled eggs with tomato and avocado for breakfast.
When lunchtime rolled around, I thought about having the leftover ravioli from last night’s dinner, but I was hungrier than that so I wandered over to Chipotle for a burrito bowl. If you haven’t tried the sofritas yet, DO IT! They are so delicious and you would never know you’re eating tofu. In addition to the sofritas my bowl had brown rice, fajita veggies, pico di gallo, corn and sour cream.
That burrito bowl kept me full through the afternoon so no snack.
Chicken Fried Steak was on the menu, but Zac worked late so we ended up going out. We had a $10 off coupon to PF Changs to use by the weekend so just went today instead of Friday. We split sichuan beef and sweet and sour chicken with brown rice on the side.
Forgot about these the past two weeks, oops.
I’ve had cold brewed coffee a few times before, most recently in Minnesota at Overflow Cafe. I Googled how to make it myself and it turns out it is super easy. All you do is put the coffee grounds and cold water into a french press and leave it in the fridge overnight. Then in the morning you just plunge, pour and add your cream and sugar! If you don’t have a french press you can leave it overnight in any sort of container, but straining out the grounds is a bit more complicated. Who keeps cheese cloth handy? I certainly don’t.
Breakfast: homemade cold press coffee, watermelon and a giant amoxicillin pill (only a few days left!)
Dinner: chicken and peas with rogan josh simmer sauce, basmati rice and naan
Breakfast: gojiberry granola and iced coffee
