What I Ate Wednesday

Breakfast: Coffee and two frittata muffins.  I got the idea to make these from watching The Biggest Loser.  Mine have turkey bacon, sauteed onion and bell pepper, some cheese and the eggs and milk.  I’ll try out some other flavor combinations next week.

Dinner: A few slices of bread, some cheese, and some olives.  Sometimes you just want snacks for dinner, on a paper plate so there aren’t dishes to wash.

What I Ate Wednesday

Happy Wednesday!

When I woke up this morning I was really craving something savory.  I had coffee and 2 hard boiled eggs with tomato and avocado for breakfast.

When lunchtime rolled around, I thought about having the leftover ravioli from last night’s dinner, but I was hungrier than that so I wandered over to Chipotle for a burrito bowl.  If you haven’t tried the sofritas yet, DO IT!  They are so delicious and you would never know you’re eating tofu.  In addition to the sofritas my bowl had brown rice, fajita veggies, pico di gallo, corn and sour cream.

That burrito bowl kept me full through the afternoon so no snack.

Chicken Fried Steak was on the menu, but Zac worked late so we ended up going out.  We had a $10 off coupon to PF Changs to use by the weekend so just went today instead of Friday.  We split sichuan beef and sweet and sour chicken with brown rice on the side.

What I Ate Wednesday

Breakfast:

This morning I woke up craving eggs.  I made 2 hard boiled eggs and served with a tomato and half an avocado.  Seems like a weird combination but it is actually really good.  You get the fat from avocado, protein from the eggs and something fresh from the tomato.

I made a big batch of pasta salad to have for lunches throughout the week.  Add ins include red, green and orange pepper, fresh mozzarella and pepperoni.

Eats for today from Topeka.  As far as I know, this is my second to last trip here for a while but we shall see.  Our travel could get extended to August and beyond.

Typically I like to eat in the bar, there is something a little less sad and lonely about eating in the bar by yourself rather than at a table.  I met a really nice lady tonight and we chatted for about 2 hours just about baseball, jobs, weddings, places we’d been, just anything.  I really enjoy meeting new people, I need to get better at this at home!
