Super Bowl Spread

We invited a few friends over for the Super Bowl last night.  The game ended up being pretty boring because none of us were fans of either team so a blowout didn’t give us much excitement.

At least we had some good food to eat!

SuperBowl foodBuffalo Chicken Meatballs from Emily Bites.  We have made these a few times before and they’ve always turned out well so it seemed like a no brainer to make them for the Super Bowl where most people eat chicken wings.  It certainly helped that we could just leave the setting on the crock pot to warm during the game so they never got cold.

I also made a batch of taco dip.  Not sure where my grandma got the recipe, but she passed it to my mom who passed it to me.  I’ve certainly seen different variations too.  I mixed an 8 oz block of cream cheese with a 24 oz container of sour cream, then I slowly mixed in a taco seasoning packet.  I put mine in a basic 9×13 pan, but you could also put it on a platter.  I topped with just the basics- lettuce, tomato and shredded cheese but you can certainly add additional things like bell pepper, olives, etc.

New To Me Recipes

In the New Years Resolution spirit I’ve tried to spice things up a bit at the dinner table and have tried some new recipes.

In an effort to eat a bit cleaner/healthier, these are paleo recipes that I modified to use “regular” ingredients (ie soy sauce instead of coconut aminos)

Some of the hits so far:

Hot and Sweet Ginger Garlic Chicken from Balanced Bites.  I did use bone in chicken thighs, but skinless ones.  On the side were steamed green beans.

Bora Bora Fireballs from The Clothes Make the Girl.  I served it with the recommended confetti cauliflower.  I went the lazy route and just mixed the toasted coconut flakes into the meatballs instead of dipping in pineapple juice and coating the outside with the flakes like the recipe says. We really liked the flavor of these, but thought they needed some sort of dipping sauce, or maybe we’re just used to regular meatballs with tomato sauce?

Being gone for a week and eating out the whole time sure does make you crave some meals that you cook yourself.  Here’s what’s on our menu this week:

Dinners

Moroccan Meatballs (with beef instead of lamb) and my first attempt at cauliflower rice.

Homemade pizza

Chicken in indian simmer sauce with rice

Ravioli with marinara sauce

After seeing those meatballs on Rachel’s menu plan for the past few weeks I figured this recipe had to be a hit.  The other things make regular appearances on our menu.  We typically buy the jar of Patak’s simmer sauce, it is the one with the purple label and add in some vegetables.

So much fruit on sale at the grocery store lately.  I’ve got cantalope, blueberries and some watermelon to eat this week.

I’m leaving the weekend open at this point in anticipation of some cookouts for Memorial Day.

I’ve been slacking on my water consumption lately.  I’m setting myself a goal of drinking 2-3 of my 750ml camelback water bottle which will give me a 50-75 oz total.
