We invited a few friends over for the Super Bowl last night. The game ended up being pretty boring because none of us were fans of either team so a blowout didn’t give us much excitement.
At least we had some good food to eat!
Buffalo Chicken Meatballs from Emily Bites. We have made these a few times before and they’ve always turned out well so it seemed like a no brainer to make them for the Super Bowl where most people eat chicken wings. It certainly helped that we could just leave the setting on the crock pot to warm during the game so they never got cold.
I also made a batch of taco dip. Not sure where my grandma got the recipe, but she passed it to my mom who passed it to me. I’ve certainly seen different variations too. I mixed an 8 oz block of cream cheese with a 24 oz container of sour cream, then I slowly mixed in a taco seasoning packet. I put mine in a basic 9×13 pan, but you could also put it on a platter. I topped with just the basics- lettuce, tomato and shredded cheese but you can certainly add additional things like bell pepper, olives, etc.
