What I Ate Wednesday

Today is Ash Wednesday so no meat for me.  I’m headed to the 7:30 pm service tonight.

Breakfast: Smoothie

I had some fruit to use up so I threw it all into my magic bullet with a few other things and let it go. Ingredients were blueberries, strawberries, a banana, a container of toasted coconut vanilla greek yogurt and a splash of milk.

20140305 BreakfastLunch: tuna noodle salad

I like to mix a bunch of stuff into mine, today’s had onion, red pepper and celery

20140305 LunchDinner: leftover couscous and shrimp with feta and tomatoes

What I Ate Wednesday

A day of eats from Topeka.  Apologies for the poor quality iPhone pictures from my desk.

When I woke up this morning, I wasn’t terribly excited for hotel breakfast or very hungry so I stopped at Starbucks for an iced coffee.  I ended up with a morning bun as well that I picked at throughout the morning.

Breakfast 20130619Lunch was a chicken wrap with lettuce, tomato, cucumbers and spicy sauce from the cafeteria.

Lunch 20130619Since I didn’t have a snack I was pretty hungry when dinner time rolled around. I headed out to Blue Moose.  I’ve been there a few times over the course of my travels here but I have to say this was probably one of the best meals I’ve had there.  I need to figure out how to recreate this sauce.

Monday Meal Plan

This week’s grocery haul was from Giant.  Lately we’ve  been switching between Giant and Harris Teeter depending on the ads.

On the menu this week:

Mushroom Stroganoff

This was our Sunday dinner.  We used beef broth, and it definitely gave it a hearty flavor.  Thick steak cut mushrooms were on sale so we just had a package of those instead of a mix like the recipe.

Shrimp Stir Fry

Garden Alfredo with Chicken (New recipe!)

Hamburgers

Hopefully the weather is nice when we make them so we can use the grill that’s outside near the pool!

Baked Chicken Nuggets

What’s on your menu this week?

Weekly Meal Plan

Normally I make the meal plan and we grocery shop over the weekend, but with the long weekend everything got shifted a bit.  I typically try and make a plan that incorporates the sales for that week and if I’m using only a small portion of a something, I try and make something later in the week that would use the rest of it.

We’re trying 2 new recipes this week!  Zucchini Boats we’ve had before, but summer squashes and italian sausage were on sale this week so it seemed like the perfect thing. Other things on sale included cherry tomatoes, fresh corn, frozen shrimp, red peppers and avocado.

On the menu for us

Tuesday: Grilled Salmon and Yellow Squash with Red Pepper Sauce

Wednesday: Out for sushi for a friend’s last day of her old job

Thursday: Spicy Grilled Shrimp with Quinoa Salad

Friday: Sausage Stuffed Zucchini Boats

Saturday: Spicy Black Bean Burgers and Corn

The black bean burgers are a new to me item that my sister recommended.  I figure we’ll have some leftover tomatoes and avocado to create a fresh salsa of sorts to top them with.
