What I Ate Wednesday

Forgot about these the past two weeks, oops.

I’ve had cold brewed coffee a few times before, most recently in Minnesota at Overflow Cafe.  I Googled how to make it myself and it turns out it is super easy.  All you do is put the coffee grounds and cold water into a french press and leave it in the fridge overnight.  Then in the morning you just plunge, pour and add your cream and sugar!  If you don’t have a french press you can leave it overnight in any sort of container, but straining out the grounds is a bit more complicated.  Who keeps cheese cloth handy?  I certainly don’t.

Breakfast: homemade cold press coffee, watermelon and a giant amoxicillin pill (only a few days left!)

20130904 BreakfastLunch: leftover salsa verde chicken over leftover spanish rice and lettuce topped with lime cabbage and guacamole

Dinner: chicken and peas with rogan josh simmer sauce, basmati rice and naan

What I Ate Wednesday

Today was a busy day, so you get some poor quality iPhone photos.  We are heading out of town this weekend to attend the wedding of a friend from high school so there was lots to finish up and get ready before leaving tomorrow morning.

Breakfast : Coffee and yogurt

Lunch: Leftovers from last night’s dinner.  A random concoction of penne pasta, spinach and feta chicken sausage, onion, peppers, feta cheese and balsamic vinegar.

Snack: Watermelon that I’d grab a couple of pieces when I walked by it throughout the afternoon.

Dinner: We picked up platters from the local BBQ place, Rockland. I got a beef brisket sandwich with mac and cheese and potato salad as the sides.  Or as my sister would say “carbs and carbs and carbs!”  So delicious though.

What I Ate Wednesday

Our building was having some internet difficulties this morning.  How this happens when its 80 degrees and sunny out is beyond me.  It finally stopped resetting itself around lunchtime.  Here were today’s eats!

Breakfast: watermelon and coffee

Loving all the fresh fruit that’s becoming available!

Breakfast 20130612Lunch: lamb kebob platter from the Mediterranean Delights food truck

The nice ladies there even let me substitute the stuffed grape leaves for the chickpeas

Lunch 20130612

Dinner: hamburgers on the grill with a side of baked beans and ear of corn

We tried the maple bacon instead of the usual homestyle beans.  Good decision.

Dinner 20130612I did well with water today! I drank 1500 ml (2 fills of the camelbak waterbottles) and a can of seltzer with dinner.

What I Ate Wednesday

This week is really flying by for me.  I can’t believe it is already Wednesday! Only 2 more days of work until some really nice weekend weather.

As I’ve started to record what I eat, when you know you’re posting pictures of what you ate for all of the interwebs to see, it makes you want to make better choices.  If that is going to help me eat a bit healthier, I’m going with it!  Without further ado, my eats for today.

Breakfast: blueberry oat cake and coffee with milk and sugar

I baked the cake last night with the blueberries that were starting to go soft.  Mine totally looks the same as the Martha Stewart Living recipe right?

Blueberry Oat Cake

Lunch: grilled buffalo chicken sandwich on wheat from Potbelly.  Toppings included hot sauce, lettuce, tomato and blue cheese.  Enjoyed with a side of watermelon and seltzer.
